Welcome Spring with Our April Farm-to-Table Tasting Menu
As North Dakota awakens from winter, we celebrate the flavors of early spring with a 6-Course Tasting Experience crafted from the freshest seasonal ingredients. Thoughtfully sourced and expertly prepared, this menu highlights the first hints of warmth while embracing the lingering chill of early April with a pairing featuring crisp Cider selection brewed by Wild Terra
First Course: English Pea and Mint Salad – a light blend of spring peas and fresh mint, finished with crème fraîche and lemon zest.
Second Course: Roasted Marrow Bone – Sandhill Farm beef marrow bone with tangy pickled Onion and confit garlic, toasted rye crisps, and a horseradish crème.
Third Course: Early Spring Panzanella - Asparagus, herbs, house-made sourdough, spring peas, ricotta
Fourth Course: Roasted Cauliflower & Almond Romesco – charred cauliflower steak with a smoky, nutty Romesco sauce, served alongside grilled asparagus and a citrus herb gremolata.
Fifth Course: Roasted Duck & Root Vegetables – Seared Wild Acres Duck with Rutabaga, a Hubbard Squash purée, and juniper-infused demi-glace.
Finale: Honey-Lavender Panna Cotta – silky panna cotta infused with local honey and lavender, topped with macerated rhubarb and almond crumble.
