Nichole Hensen is the chef and owner of Nichole’s Fine Pastry. Nichole grew up on a family farm near Glenburn, North Dakota; where she enjoyed helping her dad raise their Hereford cattle.
She graduated from the University of North Dakota with a degree in Information Management. Nichole attended the Culinary Institute of America in Greystone, California. She honed her pastry skills at Fargo’s VIP Room and at Widman’s Chocolate on Fargo’s South Eighth Street. Among other reasons for opening a pastry shop Nichole wanted to create a nice place to work. Being able have a view of the outdoors was the impetus behind Nichole’s restoring the windows on the north side of the shop’s walls.
Nichole recently married Joe Leggio. Originally from Baton Rouge, Joe has been a school teacher in Fargo for the past 20 years.
